Whipped Funfetti Cream

My favorite mascarpone whipped cream is enhanced by the addition of cake batter and sprinkles. In only 5 minutes, you’ll have a huge bowl of funfetti whipped cream ready to go!

Everyone knows I like mascarpone whipped cream. Everything about it appeals to me, and it takes more effort than I like to confess not to sit down with the bowl and eat it by the ladle spoonful.

Are I right about #bakerproblems?

And I just exacerbated my own problems by adding cake mix and sprinkles to the well, mix. I’m a sucker for anything cake batter. Cake batter ice cream, fudge, and cake batter cake batter!

Now for the cake batter whipped cream.

Ingredients for funfetti whipped cream

  • 1 quart heavy whipping cream
  • 4 oz. mascarpone cheese
  • cake mix (vanilla or funfetti)
  • If using a funfetti cake mix, eliminate the cuprainbow sprinkles.

5 tips for making funfetti whipped cream

  • My favorite mascarpone cheese to use is the classicBelGioioso, which comes in a white and green jar and can typically be found in any grocery shop. It makes a difference whether it’s fresh out of the fridge and cold!
  • The mixing basin should be as cold as possible. Place it in the freezer for an hour before beginning to prepare the dish.
  • I produce my own vanilla extract from vanilla beans and vodka, but it takes a lot of forethought! Thus, if you’re pressed for time, I definitely suggest Nielsen-Massey Madagascar Bourbon Vanilla Extract (aff link). It’s a little pricey, but I genuinely feel it’s worth it. If you’re on a tight budget, Rodelle pure vanilla extract (aff link) is always a good bet.
  • You will also need a KitchenAid for this recipe since a hand mixer will wear your arm out (aff link).
  • And if you’re feeling fancy, fill up one of those stainless steel whipped cream dispensers! I’m not fancy, so I simply put mine in a sealed plastic jar.

Heat treating the flour in the cake mix

If you are worried about the presence of microorganisms in raw flour, lay it out on a baking sheet and toast it at 350F for 5 minutes. Let it to cool before proceeding with the directions above.

Please keep in mind that the sprinkles in the funfetti cake mix may discolor or get melted and spread. So don’t worry, it’s just another incentive to add extra sprinkles.

Great! Now what should I do with it?

It’s the cherry on top of everything! Nothing to it (eat it straight from the bowl)! Put it in a ready-made pie crust and call it a day!

Ingredients

  • 1 quart heavy whipping cream
  • 4 oz. mascarpone cheese
  • 1 cup cake mix (vanilla or funfetti)*
  • If using a funfetti cake mix, eliminate the cuprainbow sprinkles.

Instructions

  • Place a large mixing bowl in the refrigerator to chill.
  • 2 CUP RIVER SPRINKLES
    2 cup vanilla or funfetti cake mix*, 1 cup whipped cream
    Mascarpone cheese and heavy cream should be mixed together in a refrigerated basin on a low setting until largely incorporated. Slowly raise the speed to high and whip until stiff peaks develop; this may take some time, so be patient!
    1 cup heavy whipping cream, 4 ounces mascarpone cheese, 1 teaspoon vanilla extract
  • Add more sprinkles to taste and serve!

Storage: Store in an airtight container in the fridge for up to 1 week.*Note about dry cake mix: If you’re concerned about the potential for bacteria in raw flour, you can quickly heat treat it by spreading it out onto a baking sheet and toasting it at 350°F for 5 minutes. Let it cool, then follow the instructions above. Just note that the sprinkles in the funfetti cake mix may discolor or become a bit melty and spread.
