We had a burst of Indian Summer this week in Massachusetts, and although I don’t enjoy the heat (and that we’ve already put away the air conditioner units for the year, oops), I like to take advantage of the summer rebirth.
It generally takes the shape of drinking coffee on the porch, going on long walks, and stopping at the local clam shack to restart the cycle (although with wine instead of coffee ;)).
If you’re having a heat wave, clear the patio table and test this dish for size: Lobster Scampi with Cheese Tortellini.
This dish, however, does not need a scorching summer day. On a crisp autumn day, while sitting at your dining room table and watching colorful leaves fall from the trees, you may truly appreciate the warm, wafting aroma of lemony lobster.
And I’ll make it in the midst of winter, covered in scarves and snow boots, huddled next to a fireplace for comfort.

Apart from the very delectable taste of this meal, my second favorite aspect about it is the aroma of the lobster boiling in the sauce. It fills the home with what may be my favorite aroma, with warm apples and cinnamon a close second. I should instantly make it into a candle.

- Small saucepan
- a spoon for mixing
Ingredients
- Buitoni Three Cheese Tortellini, 20oz packet, cooked according to package guidelines
- 2tablespoonsbutter
- 2 tbsp. olive oil
- 2 teaspoons minced garlic
- 1 pound of blobster meat
- a cup of white cooking wine
- 1 freshly squeezed lemon
- 2 teaspoons lemon zest
- 1 tsp crushed red pepper flake
- 1 teaspoon dried parsley
- Season with salt and pepper to taste.

Instructions
- Cook the pasta according to the package guidelines. Set aside, covered.
Buitoni Three Cheese Tortellini 20 oz. - Melt butter in a large saucepan over medium heat.
2 tbsp. melted butter - Mix in the olive oil and garlic. Cook, stirring regularly, for 2-3 minutes.
2 teaspoons garlic, 2 tablespoons olive oil - Stir in the lobster flesh for 5 minutes, stirring regularly.
1 pound lobster meat - 1 lemon, 2 tablespoons lemon zest, 1 tablespoon crushed red pepper flakes, 1 tablespoon dry parsley
Add the white wine, lemon juice, lemon zest, red pepper flakes, and dried parsley to the pan. Simmer, stirring regularly, for 2-3 minutes, or until the sauce mixes and starts to thicken.
1 - Frequently spoon the sauce over the lobster. Season with salt and pepper to taste, and more red pepper flake if you like it hotter.
