Graham crackers are coated in butter and brown sugar before being sprinkled with chocolate and marshmallows for an easy-to-make and irresistible delicacy!
I’m going to apologize right now because this Smores Toffee Bark is about to destroy all other smores for you. You’ll always want to slather your graham crackers with butter and brown sugar.
You’ll be upset the next time someone prepares smores over a campfire and delivers you chocolate and marshmallow sandwiched between two regular graham crackers. I apologize.

People will fall in love with s’mores bark!
My teammates’ emotions ranged from ecstatic to ecstatic:
- WHY ARE YOU WORKING HERE? PLEASE OPEN A BAKERY.
- 7 and offering it for sale at the Haasch Hut (okaywe can think of a better name for your chain of bakeries). You should be creating nice sh*t all the time.
- I was just going to sample some of the toffee that had broken off a piece that someone else had taken. Then I ate two complete pieces by mistake. Yeah, number three. FINE. FOUR. I APPOLOGY.
This isn’t a joke. It’s delicious and addicting. Don’t pretend I didn’t warn you.
How to make s’mores bark
To begin, preheat your oven to 350°F. Next, arrange the graham crackers on the baking sheet you’re using, which should be lined with parchment paper or a nonstick silicone mat (aff link).
2 sheets), although they are 46 on a bigger pan (12 sheets). As you can see in the photographs below, I lay up 35 graham cracker halves on a little 9×13 sheet pan.
While the recipe is intended for a 9×13 pan, I suggest double it if you want to use a larger pan.
- Combine butter and brown sugar in a small saucepan over medium heat, stirring continuously. Remove from fire as soon as it begins to boil, then whisk in vanilla essence and pour over graham crackers on prepared baking sheet. Spread it as evenly as possible using a spatula.
- Put in the oven for 2-3 minutes.
- Remove from the oven and sprinkle with chocolate chips right away. Let it to sit for a few minutes to melt from the remaining heat before spreading it evenly with a spatula.
- Cover the surface with marshmallows (you wont be able to use a spatula to spread this layer). Sprinkle chopped chocolate, chocolate chips, or chocolate bar bits and broken graham cracker crumbs on top if preferred.
- Return the pan to the oven and set the heat to broil. Remove the pan once the marshmallow tops are golden brown (2-3 minutes).
- Let to cool before placing the finished bark in the refrigerator to solidify. Serve cut or broken into pieces.
What are the best graham crackers to use?
I generally have Honey Maid graham crackers on hand, but you could use Nabisco, Annies, or anything you can find.
I’ve had both honey and cinnamon flavored graham crackers, and they’re both great.
What kind of chocolate should I use?
You may use whichever chocolate you choose, but I always suggest using high-quality chocolate (no offense, Hersheys I know youre the OG smores chocolate choice).
I like dark chocolate, but semisweet or white chocolate would also work. Chopped chocolate bars melt faster than chocolate chips, but both work!
You’ll be OK as long as you finish up with a melted chocolate coating.
How to store s’mores bark
To protect your cooled, set smores bark from becoming melty and sticky at room temperature, store it in an airtight container in the fridge.
