Supper on a Sheet Pan with Sausage and Peppers

This sheet pan sausage and peppers dinner may be easily customized with any veggies you have on hand! Perfect for a fast supper or weekly meal planning.

2020 has been a difficult and stressful year for everyone, it goes without saying. If there is a silver lining, it is that many individuals have begun to spend more time in the kitchen!

Some individuals were doing it for the first time, while others were honing their talents, both because they had more time and had no option but to stay at home.

Of course, our vital personnel are an exception, and I can’t thank them enough for everything they’ve done at this tough time.

But, after 6 months of experimenting with intricate and sophisticated recipes, as well as dinners that need several days to marinade and prepare, I believe we were all a bit exhausted. I know I’ve been aching for a night out at our favorite restaurant to take a break from cooking supper.

That’s why I’ve recently resorted to some simple and fast dinners, but I don’t want us to start relying on frozen pizzas and packaged mac and cheese. This sheet pan sausage and peppers supper is one of my favorites!

Why sheet pan dinners are the best

  • All you need is a cutting board and a sheet pan. It means fewer dishes to clean and simpler directions to follow. Huuzah!
  • It is simple to personalize. I’ve included my favorite vegetables to include in addition to the sausage links in the recipe card, but you can simply alter it to include any veggies you choose.
  • You don’t like sausage? Take it out! Just cutting out the meat makes this dish vegetarian.
  • Everything comes together quickly. The amount of time you need to spend cutting vegetables varies, but the rest of the preparation is simple. Mix everything together on a baking pan, bake, and serve. That’s all.

Different kinds of sausage to use

Italian It’s an Italian sausage, you guessed it! They are available in fiery or sweet varieties, and are commonly cooked with pork and seasoned with garlic and anise seeds. The spicy type, which also contains red pepper flakes, is my particular preference for this recipe. Make sure they’re fully cooked to the safe temperature of 160F. We like to use spicy Italian sausage from a local vendor, The Sausage Men.

Kielbasa A smoked, partly smoked, or unsmoked Polish sausage made from pig country sausage. Make sure the latter two methods are cooked through to the necessary safe temperature of 160F.

Andouille A spicy smoked sausage with a kick that is widely used in Cajun recipes. Since it’s smoked, it’s already cooked, and adding it to this sheet pan supper eliminates the need to worry about the internal temperature.

Bratwurst A German sausage that comes in a variety of flavors, usually made of pork or veal and seasoned with nutmeg, ginger, and caraway seeds. Make sure they’re fully cooked to the safe temperature of 160F.

Chorizo Uncured spicy sausage from Mexico that is seasoned with garlic, chiles, and other spices. Since they are usually supplied in casings, you need remove them before cooking. Make sure they’re fully cooked to the safe temperature of 160F.

This may seem to be a stupid topic for a how-to, but I believe it is worth addressing since there are a few of possibilities. Both generate what are known as sausage coins.

They are 2 to 1 thick, but may be sliced thinner or thicker if needed. You may just slice them perpendicular to the cutting board with your knife, or you can cut them diagonally at a 45-degree angle. Sausage coins are often worth between $1 and $2.

I like to cut them diagonally because it gives them a more upscale appearance.

What kinds of vegetables to use

These are some of my personal favorites for this meal; feel free to use as few or as many as you like:

  • 2 red potato pieces, chopped into 1
  • Zucchini, cut into 1 inch circles
  • Summer squash, cut into 1 inch circles
  • Vibrant yellow, red, and green bell peppers, cored and thinly sliced
  • Broccoli, finely chopped
  • Cut onion into thin strips
  • Green beans, trimmed ends
  • Trimmed bottom stalks of asparagus
  • Cherry tomatoes, roasted whole
  • Sweet potatoes, sliced into 2 pieces
  • Carrots have been peeled and chopped into rounds.

These are my top picks for spices and seasonings:

  • Garlic
  • Basil
  • Oregano
  • Thyme
  • Parsley
  • Flakes of red pepper

What to serve with sheet pan sausage and peppers

To be honest, I enjoy it just the way it is! But the beautiful thing about this recipe is that you can serve it with one of these other dishes for a heartier meal:

  • Serve on top of a bed of white or brown rice.
  • Toss your preferred spaghetti with the meat and vegetables.
  • Try riced cauliflower if you’re aiming to eat less carbs.
  • Lemon wedges to squeeze over the top are a terrific way to give each person’s food a little additional zing.

Sheet pan sausage and peppers is a terrific Sunday recipe to cook and then divide into airtight containers to reheat for dinners or lunches during the week.

The beautiful thing about sheet pan meals is that you can fill them with anything you have on hand, so you could cook them every week and have something new each time!

To make it even easy to grab and go for each meal, slice the sausage before keeping it.

Leftovers may be kept in an airtight container for up to 5 days.

Reheat in a pan over medium-low heat until warmed through, or in a microwave, gently covered, until warm.

This sheet pan sausage and peppers meal is made on a single baking sheet and is easy to customize with whatever vegetables you have on hand! Great for a quick and easy dinner or for weekly meal prep.


  • 3 tbsp. olive oil
  • 4 minced garlic cloves
  • 1 tsp dried basil*
  • 1 tsp dried oregano*
  • 1 tsp dried parsley*
  • 1 tsp dried thyme*
  • 1 tsp red pepper flakes*
  • 4 links of Italian sausage
  • two parts (about 2 cups) 2 red potatoes, cubed 1
  • 1 zucchini, chopped into one round
  • or orange bell peppers, cored and chopped into thin strips 3red, yellow, and orange bell peppers
  • 1 broccoli head, chopped (about 4 cups)
  • chop onion into thin strips (about 2 cups)
  • 2 teaspoon of each) Salt and pepper to taste (I use approximately 1 teaspoon of each)
  • Toppings: lemon wedges


  • Preheat the oven to 400 degrees Fahrenheit and prepare a big sheet pan with parchment paper or foil. Set aside.
  • 1 head broccoli, 18 teaspoon red pepper flakes*, 2 red potatoes, 1 zucchini, 3 red, yellow, and orange bell peppers
    Put all of the vegetables on the prepared baking sheet, sprinkle with oil, and season with salt and pepper. Toss and coat with tongs.
    3 tbsp olive oil, 4 garlic cloves, 1 tsp dried basil*, 1 tsp dried oregano*, 1 tsp dried parsley*, 1 tsp dried thyme*, 1 tsp dried rosemary*
  • In a large mixing bowl, combine oil and spices, then add vegetables and toss or swirl to completely coat before transferring to prepared baking sheet in an even layer.
  • Top with entire sausage links, nestling them into the vegetables with tongs so they don’t slide around. Brush the tops of the links with olive oil to brown them.

  • Sauté for 15 minutes on the center rack of the oven, then use a spatula or tongs to move the vegetables about a little. Cook for another 15 minutes, or until the vegetables are soft and the sausage is cooked through, turning the sausage links over and brushing with a little extra oil on the side facing up.
  • This step is optional, but highly recommended: Set the oven to Broil and brown the tops of the sausage and vegetables for 3-5 minutes, keeping an eye on everything to ensure they don’t burn!
  • Garnish with freshly chopped parsley. Enjoy alone or on top of cooked rice, couscous, or quinoa!
