What are Scotcheroos?
Scotcheroos are similar to Rice Krispie Treats, but without the marshmallows. It’s similar to chocolate peanut butter rice krispies snacks.
Scotcheroos are chocolate and butterscotch-flavored bars with a layer of peanut butter blended with Rice Krispies cereal and topped with a layer of chocolate and butterscotch.
If you go to a gathering in the Midwest of the United States, you can almost always count on someone bringing a pan (or three) of scotcheroos.
Who invented Scotcheroos?
To be honest, I believe the easy solution is Kelloggs! They put the recipe on Rice Krispies boxes in the 1960s, and it has been a success ever since.
Ingredients for scotcheroos
- Rice Krispies cereal does not have to be the name brand; any crispy rice cereal would suffice.
- Peanut butter that is creamy I’ve tried using natural peanut butter (the sort that requires stirring to incorporate the oil) and it’s hit or miss. I like Justins Traditional Peanut Butter Spread, however Skippy Natural is a less priced alternative.
- want to. Brown sugar, light I love the taste of light brown sugar since it compliments the butterscotch flavor better than white sugar, although granulated sugar may be substituted if necessary.
- Corn syrup (light) If you don’t have light corn syrup, you may use honey instead. But keep in mind that depending on the degree of the taste of the honey you chose, you may end up with a somewhat different flavor.
- Vanilla flavoring This is optional, but recommended. I believe it just adds a more well-rounded taste to the completed product.
- Chips in dark chocolate I use dark chocolate for mine to help balance out the richness from everything else, but you can use semi-sweet chocolate chips instead if you choose. I don’t advocate using milk chocolate since the finished product will be way too sweet.
- Chips in butterscotch The show’s main attraction! Nestle Toll House Butterscotch Morsels seem to be the most often available alternative, although I’ve also seen Guittard Butterscotch Baking Chips on occasion.
- Sea salt flaky Garnish on the top is completely optional, but I prefer to use it to balance off the sweetness. I like sweet and salty snacks!
How to make scotcheroos
- Coat an 8×8 baking dish with nonstick spray, then line with parchment paper and spray again. Set aside.
- Set aside the Rice Krispies in a large mixing dish.
- Combine peanut butter, light brown sugar, and corn syrup in a medium saucepan over medium heat, stirring frequently, until it begins to bubble and come to a boil.
- Remove from heat immediately, mix in vanilla if using, and pour over rice krispies, coating and combining with a spatula.
- Pour the mixture into the prepared baking dish and gently push it into the pan with your spatula. You want to apply strong pressure to prevent the bars from crumbling, but not so much that they become harsh.
- Combine dark chocolate and butterscotch chips in a small saucepan over medium heat and stir regularly until melted and blended.
- Pour the chocolate mixture evenly over the top of the rice krispies, sprinkle with flaky sea salt if preferred, and put in the fridge to set fully.
- Remove the bars from the pan and place them on a cutting board, then cut them into 16 squares. Serve and have fun!
Are caramel and butterscotch the same thing?
Nope! The primary distinction between caramel and butterscotch is that caramel is prepared from granulated sugar, while butterscotch is created from brown sugar.
That is why I like brown sugar in my scotcheroo bars. I believe it compliments the butterscotch taste foundation better than granulated sugar.
How many calories are in a Scotcheroo bar?
Each bar is about 201 calories using this recipe and the assumption that the pan is split into 16 separate bars.
Helpful tips
- Spray, line, and spray some more. Spray the baking dish with nonstick spray, line it with parchment paper, then spray it again to ensure they don’t stick.
- As soon as the mixture begins to bubble, remove it from the fire. The most common cause of hard scotcheroos is that the sure mixture got to a boil, so as soon as it comes to a simmer, remove it from the stove and combine it with the rice krispies.
- Don’t overfill the pan with the ingredients. You want to apply strong pressure to prevent the bars from crumbling, but not so much that they become harsh.
FAQs
The most common cause of harsh scotcheroos is because the sure mixture got to a boil. To prevent this, as soon as the mixture is mixed and comes to a simmer, take it from the heat and combine it with the rice krispies.
You can, but the texture and taste may be somewhat different as a consequence. Replace the corn syrup with honey, 1:1!
Scotcheroos may be stored in an airtight container at room temperature for up to 3 days.
