Pupcakes with Peanut Butter and Banana

Peanut butter and banana cupcakes for your dog, topped with mashed potato icing and a dog treat garnish!

I learned late on March 23rd that it was National Puppy Day.

And how could I not commemorate my favorite little girl?

Then, as is my wont, I had to go a bit overboard. Indeed, I do refer to them as pupcakes.

A puppy does not need a handcrafted pupcake.

And, no, she doesn’t care how it appears.

And yes, I am insane for baking a cupcake for my dog that looks delicious enough to eat. I don’t mind. She is deserving!

Clearly, she is content with my decision.

She received a double dose of peanut butter with the heart-shaped goodie, which is one of my handmade peanut butter and bacon snacks.

The other was a Hare of the Dog Rabbit Recipe Red Apple & Dandelion treat from her most recent BarkBox, and although she doesn’t perform backflips for these as she does for mine (thankyouverymuch), she does like them.

Description

Cupcakes for your dog are made with peanut butter and banana, and topped with a mashed potato “frosting” and a dog treat garnish!

Equipment

  • Muffin/cupcake tin
  • Mixing bowls
  • Mixing spoon
  • Potato masher
  • Wire cooling racks

Ingredients

Pupcakes

  • ¼cupwhole wheat flour
  • ¼teaspoonbaking soda
  • 1heaping tablespoon natural peanut butter
  • 1tablespooncoconut oil
  • ¼of a banana, mashed
  • ¼teaspoonvanilla extract
  • 1tablespoonhoney
  • 1egg white

“Frosting”

  • 2cupswater
  • 1small potato
  • 1teaspoonfat free milk
  • 2dog treats

Instructions

  • Preheat oven to 375° F. Spray 2 cups of muffin pan and set aside.
  • In a large bowl, combine all batter ingredients and mix until well combined.
    1/4 cup whole wheat flour, 1/4 teaspoon baking soda, 1 heaping tablespoon natural peanut butter, 1 tablespoon coconut oil, 1/4 of a banana, 1/4 teaspoon vanilla extract, 1 tablespoon honey, 1 egg white
  • Pour batter into muffin pan and bake for about 15 minutes. Tops should be golden and firm. Let cool in pan for a couple minutes and then move to wire rack to cool completely. 
  • Peel potato and chop into cubes. Fill pan with water and bring to a boil. Add potato and boil until potato falls apart when stuck with a fork. Drain.
    1 small potato, 2 cups water
  • Mash potato, add milk and use a hand mixer to combine completely. It should be a consistency that will be smooth and thick enough to pipe as frosting.
    1 teaspoon fat free milk
  • Cut the corner off of a small baggie and scoop potato frosting inside. Squeeze it all down to one end and pipe on top of cooled pupcakes in whatever manner you’d like. Top with dog treats and let your pup enjoy!
