These Almond Butter (affiliate link) Pretzel Bites have a brief backstory: When a colleague asked if I had any recipes for energy bites, I told her that I did. I prepared them over the weekend, brought them to work, and she became infatuated with them and ate them all. The conclusion.
Alright, maybe there will be a sequel to this tale.

Good, you’re up to speed. Returning to the narrative
This week, it was an Eat Well Be Well themed box with coupons for healthy treats and a package of Glutino Gluten-Free Pretzel Twists. Although I do not have a gluten-related dietary restriction, I do try to avoid it as much as possible.
Because a colleague just inquired for a recipe for energy balls, and I just received this bag of pretzels, and my go-to energy ball recipe includes pretzels, why not take advantage of the occasion to snap some photos and publish it to the blog?
Of course, before pouring the bag into the bowl, I tried a few to see what I liked. Spoiler alert: they’re delicious! I wouldn’t have known they were gluten-free if you hadn’t told me.
I’m fairly picky when it comes to gluten-free food that tastes like it should include gluten, and this one passed the test. Too cha ching! Just the correct amount of salt!
This dish is one of my favorites since it perfectly fulfills my salty and sweet needs while also keeping hunger at bay. I normally use almond butter (affiliate link), but you can substitute peanut butter for the same amazing outcome with a little different taste.
or vegetarian (agave syrup and vegan chocolate for drizzling). They’re naturally dairy-free and no-bake, which are both huge pluses. Even better, you can make them totally gluten-free (by using GF oats) and vegan.
There is no need for extra salt since the pretzels provide just enough to balance things out. So, essentially, they’re the ideal snack. Just a thought.
But wait! This tale has a third installment.
I got distracted while spreading dark chocolate over these bad boys by the cat wanting to jump on the counter I was using and stopped paying attention to what I was doing. I had a pastry bag full of heated chocolate in one hand and was slowly moving a cat’s face off the counter and onto the floor with the other.
During the procedure, I squeezed the bag too hard and pushed the little decorative tip straight out and into one of the bites (insert slow-motion me shrieking Nooooo!).
And it stuck to it because the chocolate was hot and the bites were cold. Immediately.
It seemed to be wearing a hat. Do you still not trust me? Look at this:
Yep. It’s sporting a chocolate-colored metal cap.
So go ahead and make them without my chocolate gaffe and let me know what you think!

Almond Butter Pretzel Bites

Description
Ingredients
- 1 cup Gluten-Free Pretzel Twists (or other brand pretzels)
- If preferred, 1 cup gluten-free oats
- 1 cup almond or peanut butter
- shredded unsweetened coconut
- 2 tbsp. Schia seeds
- 2 tbsp. coconut oil
- 2 teaspoons of honey, maple syrup, or agave syrup
- optional tsp vanilla extract
- Optional drizzle of dark chocolate
Instructions
- In a food processor, combine pretzels and oats and pulse to make tiny bits.
1 cup oats, 1 cup Glutino Gluten-Free Pretzel Twists - 1 tsp vanilla extract
14 cup almond butter or peanut butter, 4 cup unsweetened shredded coconut, 2 teaspoons chia seeds, 2 tablespoons coconut oil, 2 tablespoons honey 1
Add the other ingredients and pulse until well blended.
1 - Form into balls and place on a baking sheet lined with parchment paper. Set aside in the freezer for 30 minutes to firm up.
- Do it immediately if you want to sprinkle with chocolate! Because to the hot chocolate hitting the chilly bits, it will set rapidly.
Chocolate, dark - Refrigerate (for short-term storage) or freeze in an airtight container (for up to two weeks). Enjoy!
