Seasoned shredded chicken and handmade tzatziki sauce are served on pita bread in single serving pizzas of a Middle Eastern staple!
Hey, amusing tale. After over six months, I neglected to publish this piece. I cooked these Chicken Shawarma Pita Pizzas in September 2015, photographed them, edited them, typed the recipe and photos into this article, then subsequently forgot to publish them until February 2016.
I’m not sure why. Maybe I was distracted by my enthusiasm since it was the week before my birthday before I spent a long weekend in Provincetown. That’s all there is to it. Let’s go with it.
Let’s speak about shawarma now. Have you ever had it? I hadn’t tasted it until 2012, and it was only because of the moment in Avengers when Tony wakes up after the fight in New York and asks, “Have you ever had shawarma?” A shawarma restaurant is roughly two blocks away. I’m not sure what it is, but I’d want to try it. It made ME want to give it a go, so I did.
There’s a little Mediterranean restaurant near my workplace that I drive by all the time but have never tried, so this was certainly the ideal opportunity.
There offered lamb, chicken, and beef choices, and I couldn’t pick, so the man prepared my with all three. First and foremost, kudos to him. Second, there was a LOT of food. What was my reaction? What the hell is going on with me?! How have I missed out on this my whole life?!
The taste is excellent, and you can tell how much time and work went into cooking the meat. The meats were roasted for a whole day on what is effectively a gigantic rotisserie. They chopped off slices for each dish as they were requested, so it couldn’t be more fresher.
The chosen meat(s) were wrapped in a huge pita with cucumber, onion, pickles, and tahini and served to me steaming hot. Sweetbabyjesus. My mouth is watering just thinking about it.
Wait a minute, I need to wipe the drool off my keyboard. BRB.
I’d give everything to be able to whip up a shawarma wrap at home on the spur of the moment, but I don’t have a large spit in my kitchen where I can slow-roast a lot of meat.
What I CAN do is make shawarma into individual-sized pizzas. Shawarma pizzas, to be exact.
Unless you have a spit to prep the meat on, you will have to cheat a bit by grilling the marinated pork (which, by the way, should marinate for at least four hours, but I prefer overnight).
I didn’t have any pickles on hand when I prepared these, and I regret it. So absolutely slice some up and throw them in with yours; it’ll really cement the deal.

Chicken
- 1 pound chicken breast
- 1 teaspoon olive oil
- 1 teaspoon minced garlic
- 1 teaspoon cumin powder
- teaspoonsalt
- teaspoonpepper
- teaspoonpaprika
- 1 teaspoon cayenne pepper
Tzatziki Sauce
- Greek yogurt, plain
- 1 teaspoon dill weed
- 1 teaspoon lemon juice
- 1 teaspoon minced garlic
- a pinch of salt
- a pinch of pepper
Pita
- 2 pita bread slices
- cuphummus
- 1 cup diced cucumber
- 1 cup chopped kosher pickle
- Cilantro as a garnish
Instructions
Chicken
- 8 teaspoon cayenne pepper, ground
12 teaspoon pepper, 4 teaspoon paprika, 4 teaspoon salt 1
In a large ziplock bag, combine the chicken breast and the marinade ingredients, and massage the bag to coat the meat. Marinate for at least 4 hours in the refrigerator (I prefer overnight).
1 chicken breast, 1 tablespoon olive oil, 1 teaspoon garlic, 1 teaspoon cumin, 1 teaspoon parsley - Cook the chicken in your favourite technique until it is well done (165F). Let to rest for a few minutes on a chopping board before shredding the chicken.
Tzatziki Sauce
- 1 tablespoon dill weed, 1 tablespoon lemon juice, 1 teaspoon garlic, 2 cups plain Greek yogurt a pinch of salt, a pinch of pepper
Combine all sauce ingredients in a small bowl. Put everything in a resealable plastic bag and leave aside. This makes it simpler to drizzle it over the pitas, but you can alternatively leave it in the bowl and spoon it on top.

Pita
- hummus 4 cup
Top each pita with a uniform layer of hummus.
2 pita bread slices, 1 - 4 kosher pickles
4 cup of cucumber 1
Evenly distribute the sliced cucumber and pickle on top of the hummus.
1 - Cut a little piece of the tzatziki sauce bag and pour (or spoon) it on top of each pizza. Garnish with cilantro leaves and serve!
