I’ve never been a big fan of St. Patrick’s Day.
I’m not Irish, but I reside in Massachusetts, and if you’re anywhere near Boston on St. Patrick’s Day, everyone is Irish.
Nothing like that is possible out here.As a native Chicagoan, I will admit that I miss watching the Chicago River turn green every year. Such a wonderful sight, yet they don’t have one.
So the closest I get to celebrating is an annual party thrown by a friend the weekend before the holiday (which is really just an excuse to get a lot of people together who don’t typically get to see each other), and I bake some kind of green or Guinnessy dessert.
We’re going minty and boozy this year! It’s just a teaspoon of Baileys in the chocolate ganache, and it’s not even a necessary.

What if I don’t have mint extract?
You don’t need to add mint extract to this since the Andes chocolate mints have enough of mint taste.
If you’re not a fan of the mint chocolate taste, go on to a another recipe that could be more to your liking, such as these fluffernutter rice krispie treats.
Ingredients that you’ll need
- A box of Andes mints (the whole box, so no sneaking one as a snack!)
- Instead of Rice Krispies cereal, try Cocoa Krispies.
- Mini marshmallows
- Unsalted butter
- Vanilla extract
- Dark chocolate
- Heavy cream
Andes mints are the item I look forward to the most at certain restaurants when the check arrives, or at some hotels when they put them on your pillow. It’s both chocolate and refreshing. It’s ideal.
God, I freaking love Andes mints.
Mint is a divisive taste, but I adore it. There is a narrow line between adding mint flavor to a meal that is wonderful and refreshing and having it taste like toothpaste. There’s no toothpaste taste here, but if you’re not a die-hard mint fan, leave out the chopped mints in the base or cut down on what you top the ganache with.
I’m not your mouth, so use your best discretion. I’m not sure what you’re capable of.
I was a bit thrilled when photographing them. It was late at night, and all I wanted to do was finish so I could eat them. I was moving too quickly, attempting to compensate for varied angles, and I smacked my hip against the table.

Base
- 14Andes mints, chopped (half a package)
- 3cupsCocoa Krispies cereal
- 3Tablespoonsunsalted butter
- 3cupsmini marshmallows
- teaspoonpure vanilla extract
Chocolate ganache
- 14Andes mints, halved (half a package)
- 1cupdark chocolate, chopped
- cupheavy cream
- 1teaspoonBaileys Irish cream, optional
Instructions
Base
- Nonstick spray an 88-inch baking pan. Line the pan with parchment paper, allowing the ends to dangle over the sides, and spray it again. Place aside.
- Cut 14 Andes mints into tiny pieces after unwrapping them. Place aside.
14 mints from the Andes - Set aside Cocoa Krispies in a large mixing dish.
3 servings Cocoa Krispies cereal - Melt butter in a medium saucepan over low heat. Heat the marshmallows, stirring regularly, until melted and mixed.
3 tbsp unsalted butter, 3 csp tiny marshmallows - 2 tsp pure vanilla extract
Remove from the heat and rapidly mix in the vanilla essence.
1 - Pour the melted marshmallow mixture into the big mixing bowl of Cocoa Krispies and stir until mostly mixed.
- Stir in the chopped Andes mints until well combined.
- Place in prepared baking dish and press into an equal layer.Tip: If you have another 88 pan, you can use the bottom of that pan to push into the top of your dish to equally spread everything!
Chocolate ganache
- unwrap and cut Set aside 14 Andes mints.
14 mints from the Andes - Set aside chopped chocolate in a small basin.
1 cup bittersweet chocolate - 4 quarts thick cream
Heat heavy cream in a small saucepan over low heat until boiling and hot, then quickly pour over chocolate. Allow it settle for a few minutes before stirring until thoroughly smooth and blended. If necessary, cook for another 15 seconds in the microwave until smooth.
1 - Pour over the rice krispie treat foundation in an equal layer, smoothing with a spatula. Arrange the Andes mint halves equally on top.Double the quantity of mints if you want the top fully coated.
- Place in the fridge for an hour or so to chill and solidify entirely. Lift out of the pan using the parchment paper edges, then slice, serve, and enjoy!
