This Girl Scout smores cookie copycat recipe is simple to create with just 3 ingredients! Gooey marshmallow fluff is sandwiched between two graham crackers and coated in melted chocolate creating a huge, rich cookie with a little soft texture.
Interesting fact: There are two entirely distinct Girl Scout Smores cookies depending on where you live.
So when I went to get the Girl Scout Smores cookies from a friends daughter and I saw the image on the box, I was so puzzled. I was anticipating chocolate-coated squares, and was instead served with small brown rectangles with phrases written on them.
Long story short, Girl Scout cookies have two distinct makers, which leads in two different options of cookies that might very well have the same name.
I also learnt that for the same reason, there are Girl Scout cookies that are the identical, but have two different names! Im learning something new every day.

Based on what Ive read, it seems like theyve ceased making the chocolate-covered square variety that Id had my eye on or at least they have where I reside.
Thats why I figured I should develop my own quick, copycat version. And to be totally honest, I never felt the Girl Scout version had nearly enough marshmallow so were going to push that up a level for my recipe.
P.S. Lets all be glad we still have our favorite thin mints!
Key Ingredients
- Graham crunch Take 6 graham cracker sheets and cut them in half to get 12 squares.
- Fluff of marshmallow The Marshmallow Fluff should be used in the white container with the red cover. Melted or roasted marshmallows will not work in this recipe.
- Melting chocolate wafers Ghirardelli chocolate melting wafers are my favorite, but you could use chocolate almond bark or chopped chocolate thinned with a little oil instead.
2 teaspoons marshmallow fluff in the centre of each graham cracker on the baking sheet. Step 1: Cover a baking sheet with parchment paper or a nonstick silicone mat (aff link) (aff link). Put out half the graham cracker squares in a single layer. Use a medium cookie scoop (aff link) (or a tablespoon) to drop 1-1 1
Step 2: Top each with one of the remaining graham cracker pieces and softly push down.
Step 3: Melt your chocolate in your favourite method, either the microwave or in a double boiler. Read the recipe card for specifics on how to make each.
Step 4: Using a candy dipper (aff link) or a fork, dunk each graham cracker sandwich into the molten chocolate.
Step 5: After thoroughly coated, pull out and gently tap the fork on the side of the dish to remove extra dripping chocolate.
Step 6:Transfer the covered sandwiches back to the parchment paper to set at room temperature.
Substitutions & Variations
- You don’t have any chocolate melting wafers? Instead of chocolate almond bark, add chopped chocolate or chocolate chips. If you use the latter, a little amount of oil may be added to assist thin out the chocolate for dipping.
- Do you dislike dark chocolate? Not a problem! Use any kind of chocolate you desire; they are very delicious with white chocolate.
- Combine the fillings! You know what else is fantastic? Making a fluffernutter smores cookie with peanut butter filling. Instead, use raspberry jam. Instead, some cooked and crumbled bacon! Please believe me when I say they’re all wonderful.
- Dress them up! I like to pour a little more melted chocolate and white chocolate on top for some added oomph, but you could also add sprinkles to make them really special.
Refrigerate the cookies in single layers between sheets of parchment paper in an airtight container in the fridge for up to 2 weeks.

These may appear similar, but theyre two separate things! Fluff is fluffy, creamy, and sticky it may be spread with a knife or scooped. Marshmallows contain gelatin in them that helps them set and keep their form, thus a melted marshmallow wouldnt remain soft and creamy the way Marshmallow Fluff does.
Theoretically, you can but the texture is going to be different. Strangely enough, is right there in the label marshmallow creme is more creamy, while marshmallow fluff is fluffier. I very much like and recommend Fluff.

- 6 sheets graham crackers, cut in half (12 squares total)
- 1cup Not marshmallow crème, but marshmallow fluff
- 10 ounces chocolate melting wafers (chocolate almond bark, chopped chocolate, or chocolate chips may be used)
Instructions
- Use parchment paper or a nonstick silicone mat to line a baking pan. Half of the graham cracker squares should be laid out in a single layer. Save the remainder for later.
6 graham cracker sheets - On the baking sheet, pour 2 teaspoons marshmallow fluff into the center of each graham cracker. Place one of the saved graham cracker squares on top of each and softly push down.
1 cup fluff marshmallowDrop 1-1 1 cookies using a medium cookie scoop (or a tablespoon).
Melt chocolate
- Microwave method: Melt chocolate in a microwave-safe dish in 30 second intervals, stirring after each, until melted and smooth. To make dipping simpler, use something with some depth, such as a liquid measuring cup. Bring water to a simmer in a double boiler (with a tiny quantity of water in the saucepan that does not touch the bottom of the upper pan). Stir in the chocolate until it is completely melted.

Coat in chocolate
- Submerge each graham cracker sandwich in the melted chocolate using a candy dipper or a fork until thoroughly coated, then raise out and gently tap the fork against the side of the dish to remove extra dripping chocolate. Return the covered sandwiches to the parchment paper to cool.
- Refrigerate for 10 minutes to chill and solidify before serving.
