Coffee Cake with Apples and Cinnamon (Gluten Free, Paleo)

This apple cinnamon coffee cake is bursting with apple cider flavor and finished with a cinnamon apple crumb topping! Gluten-free, dairy-free, and paleo are all options. Next, try my paleo cranberry coffee cake.

I’m not going to bore your ears today. Wait, did you close your eyes? In any case, I’m not going to mutilate you for the sake of a tale.

To be honest, I’m fatigued because I’ve gotten the cold that my husband has been battling for over a week now (shakes fist), I’ve been plowing through a large backlog of blog work that I need to get done before the holidays, and the chilly weather has made me drowsy.

Is apple cider paleo?

Apple cider is made from apples, a plant food that is considered a component of a paleo diet, however it does include sugar from those apples, but not the fiber that you get from chewing into an apple.

Therefore I handle apple cider in my paleo dishes the same way I do any other ingredient; it’s all about moderation. I’m cool with that, but if you’re not, that’s great too. It just implies that this may not be the recipe for you!

Ingredients for paleo apple coffee cake

Crumb topping:

  • a cup of almond flour
  • a cup of coconut sugar
  • 1 tsp ground cinnamon
  • 3 tablespoons solid coconut oil (not melted)
  • 2 medium tart apples, diced
  • cupwalnuts,chopped

Cake:

  • a cup of almond flour (aff link)
  • 1 cup of coconut flour
  • 2 tbsp baking powder
  • 1 tsp baking soda
  • 1 teaspoon cinnamon powder
  • teaspoonsalt
  • cup solid coconut oil (not melted)
  • a cup of coconut sugar
  • 3eggs
  • cider made with cupapples
  • coconut milk or almond milk
  • 1 tsp vanilla extract

Storing apple coffee cake

This coffee cake is inspired by the cranberry coffee cake I prepared last month, and I can’t decide which is my favorite. This one is moister due to the inclusion of apple cider, but it does not keep as long in storage.

This is best eaten the same day or the following day and saved in an airtight container (ideally in the fridge), but I wouldn’t keep it any longer.

That, in my opinion, makes it the ideal breakfast for when you know you’ll have a crowd! Christmas morning, breakfast, or a small group of hungry folks.

So go ahead and have a piece (or two, I won’t tell) with your morning tea or coffee. If you’re not paleo, make a little vanilla glaze and sprinkle it on top; it adds a little something something.

Ingredients

Crumb topping

  • a cup of almond flour
  • a cup of coconut sugar
  • 1 tsp ground cinnamon
  • 3 tablespoons solid coconut oil (not melted)
  • 2 medium tart apples, diced
  • 1 cup chopped walnuts

Cake

  • a cup of almond flour
  • 1 cup of coconut flour
  • 2 tbsp baking powder
  • 1 tsp baking soda
  • 1 teaspoon cinnamon powder
  • teaspoonsalt
  • 1 cup solid coconut oil (not melted)
  • a cup of coconut sugar
  • 3eggs
  • cider made with cupapples
  • cup almond or coconut milk
  • 1 tsp vanilla extract

Instructions

  • Preheat the oven to 350°F and line an 88-inch baking pan with parchment paper. Set aside.

For crumb topping:

  • 4 cup coconut sugar, 1 tsp ground cinnamon, 3 tbsp coconut oil
    4 cup almond flour, 14 cup coconut sugar, and a sprinkle of cinnamon. Cut in the coconut oil with a pastry cutter until totally mixed and crumbly. Set aside.

    Whisk everything together in a medium mixing basin. 1

For cake:

  • a teaspoon of salt
    14 cups almond flour, 14 cups coconut flour, baking powder, baking soda, cinnamon, and salt.

  • 2 cup shredded coconut
    2 tablespoons coconut oil 1
    In a large mixing basin, blend coconut oil and coconut sugar until completely incorporated.

  • 1 teaspoon vanilla essence, 4 cup almond milk

    Combine the eggs, cider, almond milk, and vanilla essence using a wooden spoon.

  • Combine the dry and wet ingredients until well blended.
  • 2 cup toasted walnuts

    Pour batter into the prepared pan. Crumble mixture, sliced apples, and walnuts on top.

  • 40-45 minutes, or until a toothpick inserted into the middle comes out clean.
  • Let to cool fully in the pan. Cut into 9 pieces and serve.

Notes

Store in an airtight container in the fridge for up to 2 days (it’s best the same way or next).
