Pranks and hoaxes do not appeal to me. I like kidding around and being surprised, but I despise pranks. I don’t enjoy being executed, and I don’t like being the receiver of them. Undoubtedly, many people appreciate them, as seen by whole TV programs and YouTube channels devoted to them, but I simply don’t understand it. So much of what is going on in the world now seems to be a joke, yet it is all true. So I don’t think I need a day devoted to deceiving people.
Suggestion: Let’s call April Pleasant Surprise Day and simply do nice and great things for people.
I spend the whole day worrying that someone will do something to me! Is anybody else feeling this way? Fortunately, I now work from home and do not have to physically interact with anybody other than my husband and the cats, none of whom are very prone to committing pranks.

I’m going to finish these baked carrot cake donuts I prepared over the weekend while I stay steadfast in my fortress of isolation. I had intended to create paleo carrot cake cupcakes, but discovered I didn’t have the necessary ingredients. So I decided to change the recipe to make it non-paleo (sorry) and to create some nice, sweet doughnuts.

Making baked carrot cake donuts
First and foremost, we used freshly grated carrots. I’ve said it before, and I’m serious about it. The store’s packaged shredded carrots are dry and tasteless. They’re going to ruin your doughnuts. That’s the end of the narrative.
Spend a few minutes cleaning, peeling, and grating your carrots. I just want you to be cautious with your hands because I love you and don’t want you to be wounded. If you don’t have a grater, acquire one like this (affiliate link) and use the bigger holes shown in the image below.
Second, they are baked rather than fried. I rarely never fried doughnuts at home (save for these maple bacon donuts), so they’re moist and chewy with a cakey texture.
To be honest, that’s how I enjoy my doughnuts. I prefer a cakey doughnut over the melt-in-your-mouth Krispy Kreme kind, but they are excellent on occasion.
They simply make me feel awful after I’ve finished eating. Maybe it’s because I eat 12 of them all at once? It can’t be it.
They’re coated in a cream cheese frosting that’s just sweet and tangy enough to compliment the doughnuts but not overpower them. The worst thing for me is biting into a doughnut and finding that the delicious icing has overpowered the donut itself.
If you don’t like the frosting, you can easily eat them without it. For a little something something, sprinkle powdered sugar or cinnamon on top.
I like to sprinkle chopped walnuts and pecans on top of mine. You may leave them out or simply do one nut at a time.
It adds a little crunch, which I like, but it also adds a little pizzazz to the aesthetic of the doughnuts. Well, the doughnuts want to seem elegant.
Can’t you just see the assurance that doughnut exudes? Can’t you tell how put-together it is?
Because you already know that if you look nice, you feel good. And these doughnuts are delicious.
Some need more flair than others, and it has nothing to do with whether or not someone dropped a fork on top of them, leaving a large depression that the icing only partially covered.
It has absolutely nothing to do with it. We’ll simply say that the doughnuts are a bit extra.

Ingredients
Carrot cake donuts:
- 1 cup plain flour
- 1 teaspoon cinnamon powder
- 1 tsp baking powder
- 1 tsp baking soda
- 1 teaspoon ginger powder
- teaspoonsalt
- 1 tsp ground nutmeg
- 1 tsp ground cloves
- 1 room temperature egg
- a cup of light brown sugar
- cup choice of milk
- 2 tbsp melted coconut oil
- 1 tsp pure vanilla extract
- peeled and grated carrots (around 3 carrots, depending on size)
Cream cheese icing:
- 2 oz. room temperature cream cheese
- 2 tablespoons room temperature unsalted butter
- 1 cup sifted powdered sugar
- 1-2 tbsp milk of choice
- 1 tsp salt
- or chopped and toasted pecans (optional) cupwalnuts and
Instructions
Carrot cake donuts:
- Preheat the oven to 350 degrees Fahrenheit. Spray a doughnut pan with nonstick cooking spray. Set aside.

12 teaspoon salt, 12 teaspoon crushed ginger, 12 teaspoon baking soda, 12 teaspoon baking powder, 4 teaspoon ground nutmeg 1
Whisk together the flour, cinnamon, baking powder, baking soda, ginger, salt, nutmeg, and cloves in a medium mixing basin. Set aside.
1 cup all-purpose flour, 1 teaspoon cinnamon powder - 2 cup chosen milk, 2 tbsp melted coconut oil, 1 tsp pure vanilla essence
2 cup of light brown sugar 1
With a hand mixer, blend the egg and brown sugar in a large mixing basin until mixed and caramel in color. Stir in the milk, oil, and vanilla extract.
1 egg, 1 - a cup of carrots
Stir the dry ingredients into the wet ingredients until just mixed. Stir in the shredded carrots until well mixed.
1 - 3 full. Using a pastry bag is the simplest method to fill them (or a plastic bag with a hole cut into the corner). 13-15 minutes (14 minutes is ideal for me), or until set and golden. Let to cool for a minute or two in the pan, then remove from pan and cool entirely on wire racks.
Spoon the batter into the prepared pan, filling each two-thirds full.
Cream cheese icing:
- Cream cheese and butter should be combined in a medium mixing basin. Beat on high speed with a hand mixer until blended and smooth.
2 oz. cream cheese, 2 tbsp. unsalted butter - Add powdered sugar and beat again, first on medium speed and gradually rising to high speed to properly incorporate.
1 cup granulated sugar - Pour in the milk 1 teaspoon at a time, pounding to blend after each addition, until you’ve achieved a dipping consistency (but not so thin thats its liquidy). If necessary, season with salt to balance the sweetness.
1-2 teaspoons chosen milk 1 teaspoon salt - Dip the tops of each doughnut in the frosting, twisting them off as you go. Smooth the tops with a tiny spatula or knife.

Notes
- Keep in an airtight container for no more than two or three days.
- I have this Wilton doughnut pan (affiliate link), and I definitely suggest purchasing two of them so you don’t have to wait for the pan to cool, clean, and re-spray before baking the next batch.
- You could eat them without the cream cheese frosting if you don’t want to use it. Top with powdered sugar or cinnamon if desired.
