Funfetti popcorn (or cake batter popcorn or confetti popcorn if you want) is the ideal colorful treat to quench a sweet and salty need! I generally end up cooking popcorn and stuffing handfuls of it, along with a handful of chocolate chips, into my mouth.
I thought there had to be a more refined method to be a total couch potato, and I discovered it. Melt the sweet and drizzle it over the salty. Bluebirdcafela.com, of course.
This recipe requires just four ingredients, can be prepared in 30 minutes, and is simple to share. Logistically, it’s simple; willpower, not so much.

How to make homemade popcorn
If you wish, you can use mildly salted purchased microwave popcorn (just make sure it’s not the sort with movie theater butter taste or whatever it’s called), but I prefer homemade. Here are a few alternative approaches to produce your own popcorn:
Make popcorn on the stove top
For a few minutes, heat a big heavy-bottomed sauce pan over medium-high heat. Reduce the heat to low after adding a few drops of water.
Cover the saucepan with a lid immediately after adding the popcorn kernels. Shake the pot every few seconds, and the kernels should start popping in a few minutes.
Shake the pot lightly every few seconds until there are 2 seconds between pops. Remove from the heat and pour the popcorn into a large mixing basin.
Make popcorn in an air popper
It’s much simpler if you have a hot air popper! Simply follow the directions for your specific model.
Make popcorn in a Whirley-Pop
People who possess Whirley-Pops are obviously devoted to them, and properly so. They’re also adorablely vintage.
Make popcorn in the microwave
I’m going to come out here. I’ve been popping popcorn in an unlined paper bag for as long as I can remember, and I’ve just now discovered that it’s allegedly frowned upon and unsafe.
For what it’s worth, I’ve never had a problem with it, and it’s so fast and simple, but I don’t want to encourage you to do anything that may be hazardous!
How to melt white chocolate
You have a few alternatives for properly melting white chocolate, but no matter which technique you select, be cautious not to overheat it or add extra moisture. Both of them cause white chocolate to seize, and there is no turning back!
- Break or cut the chocolate into tiny pieces and lay it in the top pan of a double boiler over hot, but not boiling, water. Melt the chocolate, stirring regularly, until smooth.
- Method 1: Break or chop the chocolate into tiny pieces and set it in a microwave-safe basin. Stir after 1 minute of heating at 50% power. Continue heating in 30 second intervals, stirring in between, until melted and smooth.
Tips for making funfetti popcorn
- White chocolate melts are preferable to white chocolate bars. I seldom advocate using candy melts over chocolate bars, but if you want the chocolate to solidify, use melting wafers since they will harden.
White chocolate bars, on the other hand, may not set entirely and may not be as crisp at the end. But don’t worry, it’s still delicious. - You may use either funfetti or white cake mix. The sprinkles in the Funfetti cake mix are already there, but I want you to add extra sprinkles anyway, so you’ll be OK either way.
- Half of the cake mix should be added to the melted white chocolate first, and the other half afterwards. This results in a more equal coating of the popcorn and a less thick mixture than if you put all of the cake mix to the melted white chocolate, which might result in clumping.
- As a last step, add extra sprinkles. Who couldn’t use a little extra color in their life?
Heat treating the flour in the cake mix
If you are worried about the presence of microorganisms in raw flour, lay it out on a baking sheet and toast it at 350F for 5 minutes. Allow it to cool before proceeding with the remainder of the instructions.
Please keep in mind that the sprinkles in the funfetti cake mix may discolor or get melted and spread. But don’t worry, it’s just another incentive to add extra sprinkles.
Can you make funfetti popcorn with kettle corn?
You’ll notice that since kettle corn is sweeter than regular popcorn, the ultimate product will be sweeter.
Can you add food coloring to popcorn?
Okay, so this was never anything that occurred to me until someone asked if they could increase the color diversity in their funfetti popcorn by adding colored popcorn to the sprinkles.
After some testing, I’m delighted to inform that you can! Simply toss or swirl a few drops of your favorite food coloring into the kernels before popping them. If you wish to do numerous colors, color and prepare them individually to prevent color merging.
Please keep in mind that you cannot add food coloring to already popped popcorn. I made an attempt. It’s awful.

Ingredients
- 6 cups popped popcorn or 6 cup popcorn kernels (see notes)
- 10 oz. white chocolate melts or white chocolate bars
- split cup funfetti or white cake mix (see notes)
- Cupsprinkles (not nonpareil since their colors bleed) and some for topping
Instructions
- Set aside a baking sheet lined with wax or parchment paper.
- 4 cup kernels popcorn
Pop the popcorn in your favorite technique and season with salt to taste. Set aside in a large mixing basin.
1 - Melt white chocolate according to package directions, stirring often until smooth and taking care not to overheat.
White chocolate melts (ten ounces) - 4 cup white or funfetti cake mix
Stir together half of the cake mix and the white chocolate.
3 - 4 cup white or funfetti cake mix
2 cup of sprinkles 3
Immediately pour the white chocolate mixture over the popcorn and blend with a spatula. Add the remaining cake mix and sprinkles and whisk or toss to blend until evenly covered.
1 - 2 cups of sprinkles
Spread in a single layer on the prepared baking sheet and top with more sprinkles (just because). Allow for at least 15 minutes, or until set, before breaking apart into little clusters. Serve and have fun!
